Creamy Coconut Chickpeas

  • 2 tablespoons coconut oil
  • ½ container THERAPY Frozen Coconut Milk 
  • 1-inch THERAPY frozen organic ginger
  • 1 medium red onion diced
  • 3 tablespoon escallion chopped
  • 12 ounces fresh or canned tomatoes, diced 
  • 5 curry leaves
  • 1 cup chopped carrots
  • ½ cup sweet green peas
  • ¼ cup cashew nuts, unsalted
  • ¼ cup raisins 
  • 16 ounces canned chickpeasdrained & rinsed 
  • 3 garlic cloves, minced
  • 1 ½ tablespoons garam masala 
  • 1 teaspoon curry powder 
  • ¼ teaspoon cumin
  • 4 pimentos 
  • pepper and sea salt to taste  


  • First, add coconut oil to a medium pot over medium-high heat.
  • Add diced onions, scallion, carrots, beans, curry leaves, garlic, and tomatoes. Then sprinkle in sea salt and ground black pepper and stir together well.
  • Keep the heat at medium and cook down for ten minutes until the onions are soft. (THAT SMELL!)
  • Add in the chickpeas, masala, curry powder, cumin, raisins, and cashews. Stir to combine.
  • Stir in the frozen or softened coconut milk and stir again. Allow this creamy curry mix to come to a bubbling boil, and then reduce to low heat and let simmer for 12 minutes.
  • Serve with basmati rice or quinoa and Enjoy!



Tropical Coconut Smoothie


  • 1 frozen banana
  • ½ cup spinach
  • ½ container THERAPY Frozen Coconut Milk 
  • ½ cup ripe papaya
  • cinnamon to taste 
  • ½ cup coconut water 


  • Add all ingredients to a blender or bullet.
  • Blitz until smooth.
  • Serve and Enjoy!
